Dinkel-Ravioli mit Ricotta, Zitrone & Majoran

Werbung /// Zu gerne stelle ich viele Lebensmittel wie Natursauerteig oder Kokosmilchjoghurt selbst her. An eine Sache habe ich mich nie so richtig rangetraut, weil ich immer dachte, dass es kompliziert sei: Käse. In der Tat ist es nicht so einfach in der heimischen Küche Käse herzustellen, aber es gibt eine wundervolle Ausnahme. Und zwar Ricotta (von lat. recocta, nochmals gekocht). Seitdem ich Ricotta das erste Mal selbst hergestellt habe, mag ich keinen anderen mehr essen. Wenn für die Herstellung gute Grundzutaten verwendet werden, schmeckt dieser Ricotta einfach unvergleichlich, wesentlich aromatischer und cremiger. Ricotta ist unter Käseliebhabern eine Geschmacksfrage, da Ricotta in purer Form sehr geschmacksneutral schmeckt. Aber genau diese Eigenschaft ist auch sein Vorteil. Ricotta bringt die Aromen anderer Zutaten hervor. Von süßen Rezepten wie Käsekuchen oder Eis bis hin zu herzhaften Gerichten wie gefüllte Zucchiniblüten oder Pizza.

On one thing I've never really dard to do it bay myself, because I always thought that it was complicated: cheese. In fact, it's not so easy to produce cheese in your kitchen at home, but there is a wonderful exception. It's the Italian cheese ”ricotta” (from lat. recocta, boiled again). Since the first time I've made ricotta, I like to eat no other more. If you use good basic ingredients for the production, this ricotta tastes incomparably, much aromatic and creamy. Ricotta is among cheese lovers a matter of taste, as Ricotta is very tasteless in its pure form. But exactly this feature is also its advantage. Ricotta produces the flavours of other ingredients. From sweet recipes as cheesecake or ice cream to savoury dishes such as stuffed zucchini flowers or pizza.

Eines meiner Lieblingsgerichte mit Ricotta sind selbstgemachte Dinkel-Ravioli mit Ricotta-Zitronen-Füllung mit Majoran. Mit etwas Olivenöl und Gemüse, etwas Pesto oder einer einfachen Tomaten-Soße schmecken sie einfach zu jeder Jahreszeit köstlich und sind ein wunderbares Comfort-Food. Dank meiner Mrs. Artisan und dem dazu gehörigen Teigroller lässt sich der Pastateig besonders zügig und schnell ausrollen, so dass die Ravioliherstellung in Rekordzeit erledigt ist. Persönlich esse ich diese Ravioli mit meiner simplen Tomaten-Soße (s. u.).

One of my favourite dishes with ricotta are homemade spelt ravioli with ricotta, lemon fand marjoram filling. With a bit of olive oil and vegetables, some pesto or a simple tomato sauce they just taste delicious in every season and are a wonderful comfort food. Thanks to my Mrs. Artisan and my new associated rolling pin, the pasta dough can be rolled out and easily roll out, so that the ravioli production is done in record time. Personally, I prefer to eat this Ravioli with my simple tomato sauce (see below).

Ricotta

Für ca. 1 kg
3,8 l frische Bio-Vollmilch (3,7% Fettgehalt oder mehr, am besten mit Naturland-/Demeter-Siegel) oder eine Mischung aus Bio-Schaf- und Kuhmilch
480 g frische Bio-Sahne
80 ml frischer Zitronensaft

Vollmilch und Sahne in einem großen Top erhitzen, bis die Mischung 90 °C erreicht hat. Dann den Topf vom Herd nehmen und unter Rühren den Zitronensaft hinzugeben. Die Mischung sollte nun gerinnen. Den Topf mit einem sauberen Küchentuch abdecken und ein Stunde ruhen lassen. Dann ein Sieb mit Mulltuch über eine Schüssel hängen und den Ricotta ca. 30 Minuten abseihen. Wer eine festere Konsistenz mag, lässt den Ricotta über Nach im Kühlschrank abtropfen. Die aufgefangene Molke kann zum Beispiel für Smoothies verwendet werden.


Simple Ricotta

For about 1 kg
3.8 l fresh organic whole milk (3.7% fat or more, preferably with Naturland / Demeter seal) or a mixture of organic sheep and cow's milk
480 g fresh organic cream
80 ml fresh lemon juice

Bring milk and cream in a large pan to the boil, until the mixture reaches 90 ° C. Then remove the pan from the heat and add the lemon juice while stirring. The mixture should now curdle. Cover the pan with a clean kitchen towel and let rest for an hour. Then hang a sieve with cheesecloth over a bowl and strain the ricotta about 30 minutes. If you like a more solid consistency, strain the ricotta over night in the refrigerator. The collected whey can be used, for example for smoothies.

Dinkel-Pastateig

Für ca. 4 Potionen
150 g Dinkelmehl Type 630
50 g feiner Hartweizengrieß oder sehr feiner Dinkelgrieß
1 Prise Salz
2 große Bio-Eier (L)

Dinkelmehl, Grieß und Salz in einer Schüssel oder auf der sauberen Arbeitsfläche vermischen und in der Mitte ein Loch formen. Die Eier in das Loch geben und mit einer Gabel erst die Eier verrühren und dann nach und nach immer mehr von der Mehlmischung unterrühren. Wenn der Teig fester wird, mit den Händen weiterkneten. Dann die Arbeitsfläche mit etwas Mehl bestäuben und ca. 10 Minuten weiter kneten und den Teig dehnen, bis er samtig-weich ist. Den Teig in Frischhaltefolie wickeln und etwa 30–60 Minuten im Kühlschrank ruhen.

Tipp: Aus diesem Basisteig könnt Ihr auch andere Pastasorten wie Lasagne, Tagliatelle oder Tortellini herstellen!


Spelt Pasta dough

Serves 4
150 g white spelt flour, type 630
50 g fine semolina or very fine spelt semolina
1 pinch of salt
2 large organic eggs (size L)

Mix spelt flour, semolina and salt in a bowl or on the clean work surface, and make a well in the middle. Break the eggs and start to mix the eggs with a fork, then stir in gradually more and more of the flour mixture until it's mixed together. If the dough is solid, go one kneading with hands. Dust the work surface with a little flour. Continue kneading and stretching the dough for about 10 minutes, until it's smooth and soft. Pat into a ball, wrap into cling film and leave to rest at least 30-60 minutes in the refrigerator, or until needed.

Tip: With this basic dough you can also make other pasta shapes such as lasagne, tagliatelle or tortellini!

Ricotta-Zitronen-Ravioli-Füllung mit Majoran

Für die Menge Pastateig (s. o.)
400 g Ricotta
50 g Parmesan oder Pecorino, fein gerieben
1 EL Grieß
2 EL frischer Majoran, fein gehackt
2 TL Zitronensaft
1 EL feiner Abrieb einer Bio-Zitrone
frisch geriebene Muskatnuss
Salz
frisch gemahlener schwarzer Pfeffer

Alle Zutaten vermischen und die Füllung mit Muskatnuss, Salz und Pfeffer abschmecken. Den Pastateig mithilfe einer Pastaausrollmaschine oder dem Pastaaufsatz der KitchenAid ganz dünn ausrollen. Die Ravioli füllen und entweder freihand formen bzw. mit dem Ravioli-Rädchen schneiden oder eine Ravioliform dafür benutzen.

Die Ravioli in reichlich Salzwasser etwa 3–4 Minuten al dente garen lassen, bis sie oben schwimmen.


Ricotta, lemon and marjoram filling for ravioli

For the amount of pasta dough (see above)
400 g ricotta
50 g Parmesan or Pecorino, finely grated
1 tablespoon semolina
2 tbsp fresh marjoram, finely chopped
2 tsp lemon juice
1 tablespoon zest of organic lemon, inely grated
nutmeg, freshly grated
salt
black pepper, freshly ground

Mix all ingredients and season with nutmeg, salt and pepper. Roll out very thin the pasta dough using a pasta machine or the dough roller of your KitchenAid roll. Fill the ravioli and either shape them freehand or cut them with a ravioli wheel or use a ravioli mold.

Let simmer the ravioli in abundant salted water for about 3-4 minutes until al dente and until they float to the top.

Einfache Tomaten-Basilikum-Soße

Für 3–4 Portionen
800 g qualitativ gute ganze Eier- oder Pflaumentomate aus der Dose
½ Dose kaltes Wasser
2 Knoblauchzehen
etwas frische Chili
1 kleines Bund Basilikum, grob zerrupft
2 EL gutes Olivenöl
Salz
frisch gemahlener schwarzer Pfeffer

Die Tomaten in eine Schüssel geben, eine halbe Dose Wasser hinzugeben und mit den Händen zerkleinern. Knoblauchzehen schälen und grob hacken. Olivenöl in einem Bräter erhitzen und die Knoblauchzehen darin 2 Minuten andünsten. Dann die Chili, Tomaten und die Hälfte der Basilikumblätter dazu geben. Die Soße auf kleinster Stufe ca. 20–30 Minuten sanft kochen lassen, bis sie eindickt. Die zweite Hälfte der Basilikumblätter hinzugeben und mit Salz und Pfeffer abschmecken. Mit Ravioli, Parmesan und extra Basilikumblättern servieren.

Tipp: Diese Soße passt auch wunderbar zu Spaghetti, Penne, Spirelli, Pasta-Aufläufen oder als Pizzabelag!


Simple tomato and basil sauce

Serves 3-4
2 x 400 g tins of good-quality plum tomatoes
½ tin of cold water
2 cloves of garlic
some fresh chilli
1 small bunch basil, roughly chopped
2 tablespoons good olive oil
salt
black pepper, freshly ground

Put the tomatoes in a bowl, add half a tin of water and break them up with your hands. Peel and finely slice the garlic cloves. Heat the olive oil in a large pan over a high heat. Cook the garlic and chilli for 2 minutes. Add the tomatoes and half of the basil leaves to. Bring the sauce to the boil  and let simmer for about 20-30 minutes until it thickens. Add the second half of the basil leaves and season with salt and pepper. Serve with ravioli, parmesan and some more basil leaves.

Tip: This sauce fits also perfectly with spaghetti, penne, spirelli, al forno dishes or as a pizza topping!
