Kirsch-Himbeer-Biskuitrolle

Eigentlich bin ich kein großer Fan vom Valentinstag. Denn ich ziehe es eindeutig vor, meinem Mann jeden Tag meine Liebe zu zeigen. Mein Motto ist " Kiss the one you love as much as you can". Trotzdem kann es sicherlich nicht schaden, die Liebsten am Valentinstag mit einer leckeren Überraschung zu verwöhnen. Denn Liebe geht ja bekanntlich auch durch den Magen. Also habe ich diese himmlische Kirsch-Himbeer-Biskuitrolle mit Dinkelmehl gebacken. Wie immer mit so wenig Vollrohrzucker wie nötig und mit einer leichteren Creme aus Quark und Sahne. Da so viele von euch auf Instagram nach dem Rezept gefragt haben, ist daraus dieser spontane Blogpost entstanden.

Nevertheless, it can certainly do no harm to spoil your loved ones on Valentine's Day with a delicious surprise. Because love goes well known through the stomach. So I made this heavenly cherry raspberry Swiss roll with spelt flour. As always with as little sugar as necessary and with a lighter cream of quark and cream. Since so many of you asked for the recipe on Instagram, I decided to post the recipe spontaneously.

Kirsch-Himbeer-Biskuitrolle

Für 1 Biskuitrolle

Für den Biskuitteig
5 Bio-Eier (Größe L)
5 EL kaltes Wasser

100 g Vollrohrzucker
¼ TL gemahlene Bourbon Vanille

150 g Dinkelmehl, Type 1050
1 Prise Salz
2 EL Vollrohrzucker zum Stürzen des Biskuits

Für die Füllung
150 g Bio-Kirschmarmelade (mit mind. 70% Fruchtanteil, z. B. von Zwergenwiese)
250 g frische Himbeeren
1 EL Vollrohrzucker

¼ TL gemahlene Bourbon Vanille
2 Päckchen Bio-Sahnestand
100 g Schlagsahne
150 g Quark (20% Fettgehalt)
10 Tropfen Rosenwasser

Für die Dekoration
50 g steif geschlagene Schlagsahne
½ EL Rote Bete Pulver
100 g Himbeeren
1 EL Granatapfelkerne
Frische oder getrocknete Rosenblütenblätter

Backofen auf 190 °C Ober-Unterhitze (Umluft ungeeignet!) vorheizen. Die Eier trennen. In einer Schüssel Eigelb und 5 EL Wasser mit den Quirlen des Handrührgerätes schaumig schlagen. 75 g Vollrohrzucker und Vanillepulver langsam dazugeben und so lange weiterrühren, bis die Masse hell und dickschaumig ist.

In einer separaten Schüssel Eiweiß und Salz sehr steif aufschlagen, dann die restlichen 25 g Vollrohrzucker einrieseln lassen und weiterschlagen, bis sich der Vollrohrzucker vollständig aufgelöst hat. Eischnee auf die Eigelbcreme geben, dann das Dinkelmehl darüber sieben und alles vorsichtig mit einem Schneebesen unterheben, dabei nicht zu stark rühren.

Dann den Teig gleichmäßig mit einem Teigschaber auf einem mit Backpapier ausgelegten Backblech verstreichen. Den Biskuit in der 2. Einschubleiste von oben etwa 10–12 Minuten hellgelb backen. Ein Küchenhandtuch mit 2 EL Vollrohrzucker bestreuen. Die heiße Teigplatte nach dem Backen sofort auf ein großes Blech oder Brett stürzen. Das Backpapier abziehen und den Biskuit noch einmal um 180° auf das das vorbereitete Küchenhandtuch stürzen, so dass die Unterseite des Biskuits direkt auf dem Tuch liegt und später die Außenseite der Biskuitrolle ist. Den Biskuit sofort von der langen Seite her mit dem Küchentuch aufrollen und auskühlen lassen.

Die Kirschmarmelade glattrühren. Die Himbeeren verlesen. Vollrohrzucker, Vanille und Sahnestand mischen. Sahne steif schlagen und dabei die Mischung langsam einrieseln lassen. Den Quark und das Rosenwasser vorsichtig unterheben. Die Teigplatte sehr vorsichtig wieder abrollen und mit der Marmelade bestreichen. Die Schlagsahne auf der Marmeladenschicht verstreichen und die Himbeeren darauf verteilen. Die Biskuitplatte mit der Füllung vorsichtig und ohne das Küchentuch wieder aufrollen. Beide Ränder mit einem Messer begradigen.

Für die Dekoration die Schlagsahne in einen Spritzbeutel mit offener Sterntülle füllen und mehrere Sahnetupfen auf der Biskuitrolle verteilen. Die Sahnetupfen mit dem Rote Bete Pulver bestäuben und die Biskuitrolle mit den Himbeeren, Granatapfelkernen und Rosenblütenblättern nach Belieben dekorieren.

Cherry Raspberry Swiss Roll

For 1 Swiss Roll

For the dough

5 organic eggs (size L)
5 tbsp cold water
100 g light muscovado sugar
¼ tsp ground bourbon vanilla
150 g spelt flour, type 1050
1 pinch of salt
2 tbsp light muscovado sugar

For the filling
150 g organic cherry jam (with at least 70% fruit content, eg from “Zwergenwiese”)
250 g fresh raspberries
1 tbsp light muscovado sugar
¼ tsp ground bourbon vanilla
2 sachets of organic cream stabilizer
100 g whipped cream
150 g quark (20% fat content)
10 drops of rose water

For the decoration
50 g whipped whipped cream
½ tbsp beetroot powder
100 g raspberries
1 tbsp pomegranate seeds
Fresh or dried rose petals

Preheat oven to 190 ° C (Convection unsuitable!). Separate the eggs. In a bowl beat egg yolk and 5 tablespoons of water with the whisk of the hand mixer until frothy. Slowly add 75 g of muscovado sugar and vanilla powder and continue stirring until the mixture is light and thick-foamed.

In a separate bowl, whip up the egg whites and salt very stiff, then pour in the remaining 25 g of muscovado sugar and continue beating until the muscovado sugar has completely dissolved. Add the egg whites to the egg yolk cream, then sift over the spelt flour and fold in gently with a whisk, but do not stir too much.

Then spread the dough evenly with a spatula on a baking sheet lined with baking paper. Bake the biscuit in the 2nd slot from above for about 10-12 minutes until light yellow. Sprinkle a kitchen towel with 2 tablespoons of muscovado sugar. Immediately after baking, place the hot dough sheet on a large sheet or wooden board. Peel off the baking paper and flip the dough 180 ° on top of the prepared kitchen towel so that the underside of the dough lies directly on the kitchen towel. Immediately roll up the dough from the long side with the kitchen towel and allow to cool completely.

Smooth the cherry jam. Mix muscovado sugar, vanilla and cream stabilizer. Beat the cream until stiff and allow the mixture to trickle in slowly. Carefully fold in the quark and rose water. Carefully roll out the dough sheet again and spread with the cherry jam. Spread the cream on the cherry jam layer and spread the raspberries on it. Carefully roll up the dough plate with the filling again and without the kitchen towel. Straighten both edges with a knife.

For the decoration fill the whipped cream in a piping bag with open star spout and distribute several cream dabs on the Swiss Roll. Dust the cream dabs with beetroot powder and decorate the Swiss Roll with raspberries, pomegranate seeds and rose petals as desired.
