Blood orange bundt cake with yoghurt & pistachios

To celebrate the short season of the epic blood orange, I reinterpreted an orange cake recipe from my grandmother. Instead of oranges, I use blood oranges together with passion fruit. This ingenious couple conjures up absolute high spirits even on gray winter days. There is also a little bite from pistachios. And of course blood oranges should not be missing in the icing and as decoration.

This bundt cake is so juicy and aromatic. It's actually one of the best I've ever baked. I hope you like the recipe too. Here you can see how the cake is made.

BLOOD ORANGE BUNDT CAKE WITH YOGHURT & PISTACHIOS

For the dough
5 eggs
180 g raw cane sugar
300 ml neutral vegetable oil
225 g thick Greek natural yoghurt
½ tsp ground vanilla
zest of a blood orange (wash off with hot water beforehand)
75 ml blood orange juice
fruit pulp from 3 large passion fruit (approx. 100 g)
50 g unsalted pistachios, finely chopped
450 g spelt flour (type 1050)
5 tsp baking powder
1 pinch of salt

For the glaze
100 g thick Greek yoghurt
25 g organic powdered sugar
30 ml blood orange juice
Zest of a blood orange (wash off with hot water beforehand)
optional to intensify the color: 2-3 tbsp strawberry powder

For decoration
approx. 2-3 blood oranges – cut into thin slices (wash off with hot water beforehand)

Preheat the oven to 175°C. In a bowl, whisk the eggs and raw cane sugar for a few minutes using a hand mixer, gradually adding the oil. Then add the vanilla powder, yoghurt, blood orange zest, blood orange juice and passion fruit pulp and stir. Finely chop the pistachios and add them. In a second bowl mix the spelt flour, baking powder and salt and add. Mix everything carefully, stirring only very briefly.

Grease a Bundt cake tin (Ø 22 cm) with butter and dust with a little spelt flour. Pour the batter into the pan and bake on the middle rack of the oven for 50 minutes to 1 hour until risen and golden brown. If no more dough sticks to a wooden stick inserted, the bundt cake is ready. Carefully turn out the hot cake onto a wire rack and let cool completely.

Mix all the ingredients for the glaze and pour over the bundt cake. For the decoration, cut the blood oranges into thin slices and arrange them in a spiral on the cake.
