Sunday kitchen love | Granola, Frühstücksmuffins & Artischocken Pizza

Auf einen Wochentag freue ich mich immer ganz besonders. Sonntage sind meine heimlichen Lieblingstage. Wenn am Samstag meistens noch etwas Hektik aufgrund der letzten Einkäufe auf dem Markt und Bioladen herrscht, liebe ich an Sonntagen vor allem wegen ihrer Ruhe. Sonntage sind auch die Tage, an denen ich mir besonders viel Zeit in der Küche nehmen kann, um neue Rezepte auszuprobieren. Ein Teil meines Berufes ist es ja, Rezepte zu entwickeln als auch Rezepte zuzubereiten. Das findet meistens jedoch unter Stress in der Woche statt. Die Küchenzeit an Sonntagen gehört hingegen ganz mir allein.

Particularly, I am always looking forward for one special weekday. Sundays are my secret favourite days. On the contrary, Saturdays usually are still a bit hectic by a shooping tour on our local Farmer's market or in supermarkets. I love Sundays mainly, because of their tranquility. Sundays are the days, when I can take me a lot of time in the kitchen to try new recipes. A part of my job is, to develop recipes and as well prepare recipes. But this happens usually a little bit hectic at working days. The time in my kitchen on Sundays, however belongs entirely to me.

Um gemütlich und in aller Ruhe in den Sonntag zu starten, lieben wir es ausgiebig zu frühstücken oder zu brunchen. Es sind auch die Sonntage, an denen ich endlich dazu komme, eine neues Buch oder eine mitgebrachte Zeitschrift zu lesen. Nach einem langen Frühstück oder Brunch mit viel Tee und Kaffee folgt immer ein langer Spaziergang im Wald. Besonders jetzt sind die Spaziergänge besonders reizvoll, weil die Natur aus ihrem Winterschlaf erwacht und es immer etwas Neues zu entdecken gibt. Bärlauch, die ersten Buschwindröschen, Vögel wie Buntspechte und Kleiber in Aktion.

To start quietly and comfortably in Sundays, we love extensively to enjoy breakfast or brunch with a lot tea and coffee. It's also Sundays, when I finally get around to read in new books and magazines. A cosy breakfast or brunch is always followed by a long walk in the woods. Especially now, the walks are quite exciting, because the nature awakes from hibernation and there's always something new to discover. Ramps, the first wood anemones, birds such as woodpeckers and nuthatches in action.

Durch meine letzten, sonntäglichen Küchenexperimente sind viele neue Frühstücksrezepte entstanden, die ich auf Instagram schon gezeigt habe, die bisher aber auf meinem Blog fehlen. Ein paar herzhafte Rezepte dürfen bei einem Brunch oder für ein besonderes Sonntagsessen natürlich auch nicht fehlen. Somit zeige ich heute mal einen ersten Schwung.

Through the past, my last Sundays kitchen experiments have emerged many new breakfast recipe. Some of thems I have already shown on Instagram that far, but they were missed on my blog. A few hearty recipes should not be missing at a brunch or for a special Sunday lunch. Thus, I show you today times a first swing of new recipes.

KiBa-Kokos-Granola

Für 1 Backblech bzw. 1 große Dose

Trockene Zutaten
175 g (glutenfreie) Haferflocken
25 g Amaranth oder Quinoa, gepufft
50 g gehackte Mandeln
50 g Kokosflocken

Zutaten zum Pürieren
1 große Banane
1 EL Dattelsüße (z.B. von Rapunzel) oder Honig
50 g Kokosöl, flüssig bzw. leicht erwärmt
1 TL Vanille
½ TL Zimt

Nach dem Backen hinzugeben
50 g getrocknete Sauerkirschen (alternativ: Rosinen, Cranberries, Gojibeeren)
25 g Kokoschips
optional: 25 g Bananenchips

Backofen auf 160 °C Ober-Unterhitze vorheizen. Alle Zutaten trockenen Zutaten bis auf die Kirschen und Kokoschips gut vermischen. Banane, Dattelsüße oder Honig, Kokosöl, Vanille  und Zimt pürieren. Dann mit den trockenen Zutaten gründlich vermengen. Mischung auf einem mit Backpapier ausgelegten Backblech flach ausbreiten, ca. 30–35 Min. (2. Schiene von oben) goldgelb backen, dabei alle 10 Minuten wenden, damit das Granola schön knusprig wird. Auskühlen lassen und mit den getrocknete Sauerkirschen, Kokoschips und optional Bananenchips vermischen.

Das Müsli mit Milch nach Wahl oder Joghurt und frischen Obst genießen!


Coconutty cherry-banana Granola

For 1 baking tray

Dry ingredients
175g (gluten-free) porridge oats
25g amaranth or quinoa pops
50g chopped almonds
50g coconut flakes

Ingredients for pureeing
1 large banana
1 tablespoon dates syrup or honey
50g coconut oil, gently heated
1 teaspoon vanilla powder
½ teaspoon cinnamon

Add after baking
50g dried sour cherries (alternatively: raisins, cranberries, goji berries)
25g coconut chips
optional: 25 g banana chips

Preheat the oven to 160 °C. Mix all dry ingredients – except dried cherries and coconut chips – in a bowl. Purée banana, dates syrup or honey, coconut oil, vanilla powder and cinnamon. Pour the liquid mixture to the bowl and mix thoroughly with the dry ingredients. Spread the granola flat on a lined baking tray. Bake for about 30-35 minutes until golden brown. Turn the granola every 10 minutes. This helps it, to get very crispy. Allow to cool. Then, mix with dried cherries, coconut chips and banana chips.

Enjoy the granola with milk or yoghurt of your choice and fresh seasonal fruits!

Frühstücksmuffins mit Erdbeeren & Quinoa

Für etwa 12 Muffins

Trockene Zutaten
75 g (glutenfreie) Haferflocken, zu Mehl vermahlen
2 EL Dinkel- oder Weizenvollkornmehl
25 g getrocknete Sauerkirschen (alternativ: Rosinen, Cranberries, Gojibeeren)
50 g gepufftes Quinoa
1 TL Weinsteinbackpulver
½ TL Vanille, gemahlen
½ TL Zimt

Zutaten zum Pürieren
½ Banane, geschält und grob zerkleinert
75 g Milch nach Wahl (ich nehme gerne ungesüßte Mandelmilch oder Buttermilch)
2 EL mildes Olivenöl oder anderes Pflanzenöl
1 Bio-Ei (Größe M oder L)
1 EL Dattelsüße (z.B. von Rapunzel) oder Honig

Fruchtige Zutaten
½ Apfel, grob gerieben
75 g (TK-)Erdbeeren, gehackt

Backofen auf 185 °C Ober-Unterhitze vorheizen. Eine Muffinform mit Papierförmchen auslegen und bereitstellen. Haferflocken im Mixbehälter der Küchenmaschine zu feinem Mehl vermahlen. Alle trockenen Zutaten in einer großen Schüssel vermengen. Die flüssigen Zutaten in ein hohes Gefäß geben und pürieren. Die Mischung zu den trockenen Zutaten geben und gut mit einem Teigschaber verrühren. Den halben Apfel mit Schale grob reiben, die TK-Erdbeeren klein schneiden und beides unter den Teig heben. Den Teig bis maximal 2/3 hoch in die Muffinformen füllen. Die Frühstücksmuffins in der mittleren Backofenschiene etwa 20–25 min backen. Sie schmecken sehr gut lauwarm als auch kalt!

Tipp: Die Muffins lassen sich wunderbar im Voraus backen und einfrieren. Bei Bedarf kurz im Ofen aufbacken und schon habt Ihr ein unkompliziertes, schnelles Frühstück!


Breakfast muffins with strawberries & quinoa

For about 12 muffins

Dry ingredients
75g (gluten-free) porridge oats
2 tablespoons spelt flour
25g dried sour cherries (alternatively: raisins, cranberries, goji berries)
50g quinoa pops
1 teaspoon cream of tartar
½ tsp vanilla powder
½ tsp cinnamon

Liquid ingredients for pureeing
½ banana, peeled and roughly chopped
75g milk of your choice (I prefer unsweetened almond milk or buttermilk)
2 tablespoons mild olive oil or other vegetable oil
1 organic egg
1 tablespoon dates syrup or honey

Fruity ingredients
½ apple, coarsely grated
75g frozen strawberries, chopped

Preheat the oven to 185 °C. Line a muffin tin with muffin cases. Add porridge oats into a food processor and dust to fine flour. Mix all dry ingredients in a large bowl. Purée all liquid ingredients in a high mixing bowl. Pour the mixture then, to the dry ingredients and mix well with a spatula. Coarsely grate the apple on a box grater, then tip to the mixture. Chop and then fold in frozen raspberries. Pour the mixture into the muffin tins, until it comes two-thirds of the way up. Bake in the oven for about 20-25 minutes until golden.

Tip: The muffins are perfectly for baking in advance and then, freeze them. If required, freshen the muffins in the oven and you have an uncomplicated, quick breakfast!

Toasted Oats mit Heidelbeeren & Apfel

Pro Person
6 EL Joghurt nach Wahl (ich liebe Schafsjoghurt)
½ Apfel (am besten leicht säuerlich, saftig und fest, z.B. Sorte “Pilot”)
3 EL (glutenfreie) Haferflocken oder Dinkelflocken
½ TL grüne Fenchelsamen (Asialaden)
je ¼ TL gemahlene Vanille und Zimt
3 EL TK-Heidelbeeren, ungesüßt
½ EL Kakaonibs (z.B. von Govinda, im gut sortierten Biosupermarkt oder online erhältlich)
je nach Saison: 1–2 EL frische Heidelbeeren

Eine Müslischale bereits stellen und den Joghurt hineingeben. Die Apfelhälfte entkernen und mit Schale in kleine Stücke schneiden. Eine Pfanne ohne Zugabe von Fett auf kleiner bis mittlerer Hitze vorheizen. Haferflocken, Fenchelsamen, Vanille und Zimt in die Pfanne geben und etwa 2–3 Minuten sanft anrösten bis es duftet. Dabei die Pfanne schwenken. Die fertig gerösteten Haferflocken auf den Joghurt geben. Nun die TK-Heidelbeeren in der Pfanne auftauen lassen und ebenfalls in die Schale geben. Die Apfelstücke, ggf. frischen Heidelbeeren und Kakaonibs auf dem Müsli verteilen und genießen.


Toasted Oats with blueberries and apple

Per person
6 tablespoons yoghurt of your choice (I love organic sheep yoghurt)
½ apple (preferably slightly sour, juicy and firm
3 tablespoons (gluten-free) porridge oats or spelt oats
½ tsp green fennel seeds (Asian supermarket)
¼ teaspoon ground vanilla
¼ teaspoon cinnamon
3 tablespoons frozen blueberries, unsweetened
½ tablespoon cocoa nibs
depending on the season: 1-2 tablespoons fresh blueberries

Pour yoghurt into a muesli bowl. Cut the apple into small pieces. Preheat a pan without adding fat on low to medium heat. Add porridge oats, fennel seeds, vanilla and cinnamon into the pan and toast for 2-3 minutes, or until it starts to smell. While toasting, toss the pan gently. Pour the finished roasted porridge oats into the muesli bowl. Melt frozen blueberries in the pan and also add them to your bowl. Sprinkle the top with apple pieces, fresh blueberries and cocoa nibs. Enjoy!

Artischocken Pizza mit Dinkelmehl

Für 2 Pizzen

Für den Teig
250 ml lauwarmes Wasser
5 g frische Hefe
12 g Salz
450 g Dinkelmehl Type 630

Für die Tomatensauce
200 g ganze Dosentomaten
1 Knoblauchzehe, geschält
1 Handvoll Basilikumblätter
½ EL qualitativ gutes Olivenöl
½ TL Salz
etwas frisch gemahlener schwarzer Pfeffer

Für den Spinatbelag
100 g Baby-Blattspinat
1 EL Olivenöl
1 Knoblauchzehe, gehackt
½ TL getrocknete Oregano
½ TL Salz
etwas frisch gemahlene Muskatnuss
etwas frisch gemahlener schwarzer Pfeffer

Für den restlichen Belag
4 Artischockenherzen, frisch gekocht oder eingelegt
2 Büffelmozarella
20 g Pecorino

Für den frischen Belag (nach dem Backen)
2 Handvoll Mangold- oder Rote-Bete-Baby-Salatblätter oder Rucola
1 Packung Sakurakresse (rote Kresse) oder andere Kresse
1 frische rote Chilischote, in feine Scheiben geschnitten

Für den Teig Hefe und Salz im lauwarmen Wasser auflösen und mit dem Dinkelmehl kräftig zu einem geschmeidigen Teig verkneten. Je länger Pizzateig geht, desto besser und knuspriger wird er. Den Teig am besten über Nacht abgedeckt im Kühlschrank gehen lassen. Bei Zimmertemperatur sollte der Teig mindestens 1–2 Stunden abgedeckt gehen.

Für die Tomatensauce alle Zutaten grob pürieren. Für den Spinatbelag den Baby-Blattspinat waschen und trocknen. Olivenöl auf mittlere bis kleiner Hitze erhitzen. Knoblauchzehe hinzugeben und kürz anbraten. Baby-Blattspinat hinzugeben, kurz andünsten bis er leicht zusammengefallen ist. Mit Oregano, Salz, Pfeffer und Muskatnuss abschmecken. Für den restlichen Belag Artischockenherzen halbieren, Büffelmozzarella in Scheiben schneiden und Pecorino fein reiben.

Backofen auf 230 °C Ober-Unterhitze vorheizen. Den Pizzateig durchkneten, halbieren und auf einer gut bemehlten Arbeitsfläche so dünn wie möglich zwei Ovale (ca. 5-8 mm dick) ausrollen. Alternativ könnt Ihr mit dieser Teigmenge auch ein ganzes Blech belegen und zubereiten. Den Teig dünn mit Tomatensauce bestreichen, mit Blattspinat und Büffelmozzarella gleichmäßig belegen. Pecorino darüber streuen. Artischocken gleichmäßig verteilen. Die Pizza vor dem Backen mit etwas Salz bestreuen.

Die Pizza etwa 12–15 Minuten goldgelb backen. Bei einem ganzen Blech verlängert sich die Backzeit. Die fertigen Pizzen mit Mangoldblättern, Sakurakresse und frischen Chilischeiben bestreuen und sofort servieren.


Artichoke pizza with spelt flour

For 2 pizzas

For the dough
250ml lukewarm water
5g fresh yeast
12g salt
450g white spelt flour, type 630

For the tomato sauce
200g good-quality tinned plum tomatoes
1 clove of garlic, peeled
1 handful basil leaves
½ tbsp good quality olive oil
½ tsp salt
some freshly ground black pepper

For the spinach topping
100g baby spinach
1 tablespoon olive oil
1 clove of garlic, chopped
½ teaspoon dried oregano
½ teaspoon salt
freshly ground nutmeg
freshly ground black pepper

For the topping
4 artichoke hearts, fresh cooked or pickled
2 buffalo mozzarella
20 g Pecorino

For the topping – after baking
2 handful chard, alternatively: beetroot baby or arugula leaves
1 pack red Asian cress
1 fresh red chilli, finely sliced

In a large bowl, mix the yeast and salt into the water. Using a fork, bring the flour in gradually from the sides and swirl it into the liquid. Keep mixing, drawing larger amounts of flour in, and when it all starts to come together, work the rest of the flour in with your clean, flour-dusted hands. Knead for 5 minutes until you have a smooth dough. Place the ball of dough in a large flour-dusted bowl and flour the top of it. Cover the bowl with clingfilm and place in a warm room for about an hour or two until the dough has doubled in size. Or better: Leave the dough covered overnight in the refrigerator.

For the tomato sauce puree coarsely all ingredients in a high mixing bowl. Then, wash and drain the baby spinach. Heat a saucepan on a medium-low heat and add a splash of olive oil and the garlic. Cook gently until the garlic starts to turn golden, then add baby spinach leaves leaves. Gently for around 1–2 minutes. Season with oregano, salt, pepper and nutmeg. Set aside to cool.

Cut artichoke hearts into half, cut mozzarella into slices and finely grate the pecorino.

Preheat the oven to 230 °C. Knead the dough, divide it in two. On a well-floured surface simply roll the dough out into rough ovals, about 0.5–0.8cm thick. Transfer the ovals on a baking tray. Alternatively, you can also roll out an entire sheet of dough for a whole baking tray.

Smear the tomato sauce over the base of your pizzas and spread it out to the edges. Spread the mozzarella and baby spinach. Sprinkle with pecorino and spread artichocke hearts thoroughly. Add a pinch of salt and pepper. If you can, cook the pizzas on a piece of granite in your conventional oven – if not, do them one by one on pieces of tin foil directly on the bars of the oven shelf, towards the bottom of the oven. Cook for 12 to 15 minutes, until the pizzas are golden and crispy.

Sprinkle pizza with chard leaves, cress and chilli slices. Serve them immediately.
