Die Rede ist natürlich vom Rhabarber, der nach dem Winter einen wahren Lichtblick auf unsere Teller zaubert. Denn neben Bärlauch und Spargel ist Rhabarber eins der ersten saisonalen Produkte. Am liebsten esse ich persönlich, den etwas weniger sauren und schön rosa-farbigen Himbeerrhabarber. Rharbarber ist übrigens ein sehr gesundes und kalorienarmes Lebensmittel und ist reich an Vitamin C, Calcium, Kalium, Eisen, Magnesium und dem Ballaststoff Pektin.

Of course I am talking about rhubarb, the one true bright spot up on our plates after the winter. Because in addition to wild garlic and asparagus, rhubarb is one of the first seasonal products. My favourite personal rhubarb sort is the slightly less acidic and beautiful pink-coloured raspberry rhubarb. By the way, rhubarb is a very healthy and low-calorie food and is rich in vitamin C, calcium, potassium, iron, magnesium and dietary fiber pectin.

Ursprünglich kommt der Rhabarber aus Russland, wo er im 16. Jahrhundert angebaut wurde, und gelangte dann im 18. Jahrhundert in andere Teile Europas. Über Umwege gelangte er erst nach Frankreich, dann in die Niederlande und schließlich nach England. Dort ist der Anbau seit 1753 belegt. Der erste Anbau in Deutschland erfolgte erst 1848 in Hamburg-Kirschwerder. Je nach Wetterlage kann man die ersten Stängel schon im April ernten, die Erntezeit endet dann Mitte bis Ende Juni. Eine kurze Saison also, die ich in vollen Zügen auskoste.

Originally the rhubarb comes from Russia, where it was grown in the 16th century. Then, it arrived in the 18th century in other parts of Europe. About detours the rhubarb came to France, then to the Netherlands and finally to England. There, since 1753 the cultivation is occupied. The first cultivation in Germany was carried out in 1848 in Hamburg- Kirschwerder. Depending on weather conditions the first stalks can be already harvest in April, the harvest period then ends in mid to late June. A short season, which so I enjoy to the fullest.

Statt dem klassischen Rührteigkuchen habe ich ein paar neue Rhabarber-Rezepte entwickelt. Was ich immer etwas schade finde, ist, dass Rhabarber, der ja eigentlich sehr gesund ist, mit Tonnen an Zucker verkocht wird. Daher habe ich meine neuen Rezepte mit alternativen und etwas gesünderen Süßungsalternativen wie Ahornsirup, Dattelsirup, Datteln und Kokosblütenzucker kombiniert.

Instead of the classic sponge cake, I have developed a few new rhubarb recipes. But, I think it's quite a pity that rhubarb, which is actually very healthy, is cooked with tons of sugar. Therefore, I have combined my new recipes with healthier sugar alternatives as maple syrup, date syrup, dates and coconut blossom sugar.

Auch das geliebte Rhabarber-Kompott hat von mir ein kleines Remake mit neuem Twist bekommen. Durch TK-Himbeeren und getrocknete Hibiskusblüte bekommt das Kompott eine schöne rote Farbe sowie durch Wacholderbeeren eine herb-erdige Note. Durch die Verwendung von Ahorn- oder Dattelsirup könnt Ihr das Kompott schon zu einem gesunden Frühstück genießen. Das Kompott ist ein Basisrezept, was Ihr pur, zum Frühstück, in meiner Biskuitrolle oder weiteren Rezepten verwenden könnt. So und mit einem neuen Vive Maria Kleid lässt sich der Frühling richtig schön genießen!

Even the beloved rhubarb compote has received a little remake with new twist. By frozen raspberries and dried hibiscus flowers the compote gets a intense red colour and an earthy note by juniper berries. By using maple or date syrup you can already enjoy the compote for a healthy breakfast. The compote is a basic recipe, what you can enjoy pure, for breakfast, in my Swiss roll or many other recipes. This way and with a new dress by Vive Maria spring can be really nice!

Rhabarberkompott mit Himbeeren & Hibiskusblüten

Für das Kompott
1 kg Rhabarber, vorzugsweise Himbeerrhabarber
1 Vanilleschote
200 g Ahorn- oder Dattelsirup (z.B. bei Alnatura)
2 getrocknete Hibiskusblüten (z.B. von Pure! Gewürzmanufaktur)
100 g TK-Himbeeren
½ EL Wacholderbeeren

Rhabarberstiele waschen sowie den oberen und unteren Teil entfernen. Die Stiele in etwa 5 cm lange Stücke schneiden. Die Haut verwende ich mit. Falls Ihr sie nicht mögt, könnt Ihr sie vorher entfernen. Die Vanilleschote längs halbieren und das Mark heraus kratzen. Vanilleschote, Mark und alle anderen Kompottzutaten in einen großen Topf geben, mischen, Deckel auf den Topf setzen und bei schwacher bis mittlerer Hitze langsam zum Kochen bringen. Dann den Deckel abnehmen und bei regelmäßigen Rühren das Kompott 10 cm sanft kochen lassen bis der Rhabarber weich, aber noch nicht komplett zerfallen ist. Die Hibiskusblüten, die Wacholderbeeren und die Vanilleschote aus dem abgekühlten Kompott entfernen.


Rhubarb compote with raspberries & hibiscus flowers

For the compote
1 kg rhubarb
1 vanilla pod
200 g maple or date syrup
2 dried hibiscus flowers
100 g frozen raspberries
½ tablespoon juniper berries

Wash rhubarb stalks and remove the upper and lower part. Cut the stalks in about 5 cm pieces. I also use the rhubarb skin. Of course, you can remove the skin, if you don't like it. Cut the vanilla pod lengthwise and scrape out the seeds. Add vanilla pod, seeds and all other ingredients in a large pot. Mix everything well, put the lid on the pot and bring over low to medium heat slowly to a boil. Then remove the lid and while regularly stirring the compote cook gently 10 minutes or until the rhubarb is already soft, but not still completely disintegrate. Remove the hibiscus flowers, juniper berries and vanilla pod from the cooled compote.

Buchweizen-Granola

Für 1 Backblech bzw. 1 große Dose

Trockene Zutaten
100 g Buchweizen, ganz
100 g (glutenfreie) Haferflocken
50 g Quinoa, gepufft

Zutaten zum Pürieren
1 große Banane
1 EL Dattelsirup (z.B. von Rapunzel) oder Honig
50 g Kokosöl, flüssig bzw. leicht erwärmt
1 TL Vanille
½ TL Zimt

Backofen auf 160 °C Ober-Unterhitze vorheizen. Alle Zutaten trockenen Zutaten gut vermischen. Banane, Dattelsüße oder Honig, Kokosöl, Vanille  und Zimt pürieren. Dann mit den trockenen Zutaten gründlich vermengen. Mischung auf einem mit Backpapier ausgelegten Backblech flach ausbreiten, ca. 30–35 Min. (2. Schiene von oben) goldgelb backen, dabei alle 10 Minuten wenden, damit das Granola schön knusprig wird. Auskühlen lassen und mit Joghurt nach Wahl, Rhabarberkompott und Himbeeren servieren und genießen.


Buckwheat Granola

For 1 baking tray

Dry ingredients
100 g buckwheat, whole grain
100 g (glutenfree) oats
50 g quinoa pops

Ingredients for pureeing
1 large banana
1 tablespoon dates syrup or honey
50 g coconut oil, gently heated
1 teaspoon ground vanilla
½ teaspoon cinnamon

Preheat the oven to 160 °C. Mix all dry ingredients in a bowl. Purée banana, dates syrup or honey, coconut oil, vanilla powder and cinnamon blossom. Pour the liquid mixture to the bowl and mix thoroughly with the dry ingredients. Spread the granola flat on a lined baking tray. Bake for about 30-35 minutes until golden brown. Turn the granola every 10 minutes. This helps it, to get very crispy. Allow to cool. Then serve with yoghurt of your choice, rhubarb compote and raspberries.

Rhabarber-Himbeer-Biskuitrolle (glutenfrei)

Für 1 Biskuitrolle

Für den Mandel-Biskuitteig
80 g Mandelmehl (teilentölt, z.B. von Schoefer Naturprodukte)
40 g Mais-Speisestärke (z.B. bei Alnatura)
5 Eier
5 EL kaltes Wasser
90 g Kokosblütenzucker (z.B. von nu3)
½ TL Vanille, gemahlen
1 Prise Salz
2 EL Kokosblütenzucker zum Stürzen des Biskuits

Für die Füllung
10–12 EL Rhabarberkompott (s. Rezept oben)
1 EL Kokosblütenzucker
¼ TL Vanille, gemahlen
1 Päckchen Bio-Sahnestand
200 g Schlagsahne
50 g Saure Sahne

Zum Dekorieren
1 Schale frische Himbeeren oder anderes Obst

Backofen auf 190 °C Ober-Unterhitze vorheizen. Das Mandelmehl und die Mais-Speisestärke vermischen. Die Eier trennen. In einer Schüssel Eigelb und 5 EL Wasser mit den Quirlen des Handrührers schaumig schlagen. 60 g Kokosblütenzucker und Vanillepulver langsam dazugeben und so lange weiterrühren, bis die Masse hell und dickschaumig ist. In einer separaten Schüssel Eiweiß und Salz sehr steif aufschlagen, dann die restlichen 30 g Rohrohrzucker einrieseln lassen und weiterschlagen, bis sich der Zucker vollständig aufgelöst hat. Eischnee auf die Eigelbcreme geben, dann die Mandelmehlmischung darüber sieben und alles vorsichtig mit einem Schneebesen unterheben, dabei nicht zu stark rühren.

Dann den Teig gleichmäßig mit einem Teigschaber auf einem mit Backpapier ausgelegten Backblech verstreichen. Den Biskuit in der 2. Einschubleiste von oben etwa 10–12 Minuten hellgelb backen. Ein Küchenhandtuch mit 2 EL Kokosblütenzucker bestreuen. Die heiße Teigplatte nach dem Backen sofort auf ein großes Blech oder Brett stürzen. Das Backpapier abziehen und den Biskuit noch einmal um 180° auf das vorbereitete Küchenhandtuch stürzen, so dass die Unterseite des Biskuits direkt auf dem Tuch liegt und später die Außenseite der Biskuitrolle ist. Den Biskuit sofort von der langen Seite her mit dem Küchentuch aufrollen und auskühlen lassen.

Rhabarberkompett glatt rühren und etwas zerdrücken, damit er feiner wird. Vanille, Kokosblütenzucker und Sahnestand mischen. Sahne steif schlagen und dabei die Zuckermischung langsam einrieseln lassen, dann die Saure Sahne unterheben. Die Teigplatte sehr vorsichtig wieder abrollen und mit Kompott bestreichen. Die Schlagsahne auf der Kompottschicht verstreichen. Die Biskuitplatte mit der Füllung vorsichtig und ohne das Küchentuch wieder aufrollen. Beide Ränder der Rolle mit einem Messer begradigen. Mit Himbeeren dekorieren und am besten am Backtag frisch genießen, da bei längerer Lagerung der Biskuit schnell durchweicht.


Rhubarb and raspberry Swiss roll (gluten-free)

For 1 Swiss roll

For the almond sponge
80 g almond flour
40 g corn starch
5 eggs
5 tablespoons cold water
90g coconut blossom sugar
½ tsp vanilla powder
1 pinch of salt
2 extra tablespoons coconut blossom sugar

For the filling
10–12 EL rhubarb compote (s. recipe above)
1 tablespoon coconut blossom sugar
¼ teaspoon vanilla powder
1 teaspoon corn starch
200 g cream
50 g sour cream

To decorate
1 cup fresh raspberries or other fruit

Preheat the oven to 180 °C . Mix the almond flour and the corn starch. Separate the eggs. In a bowl, using an electric hand mixer whisk the egg yolks and 5 tablespoons water until pale. While whisking, add slowly 60 g coconut blossom sugar and vanilla powder. Continue stirring until the mixture is pale and thick fluffy. In a separate bowl, whisk egg whites and a pinch of salt until stiff. Then, sprinkle in the remaining 30 g coconut blossom sugar and continue beating until the sugar has completely dissolved. Add egg whites to the yolk cream, sift the almond flour mixture in and slowly fold it through with a spatula. Don't stir it too much.
Then spread the batter evenly with a spatula on a lined with baking tray. Place the tray on the middle shelf of the oven and bake for 10 to 12 minutes, or until cooked through and pale yellow.

Sprinkle a kitchen towel with 2 tablespoons coconut blossom sugar. Take the sponge out of the oven and confidently flip it over on to the kitchen towel. Peel and discard the piece of paper, then, while the sponge is still warm and flexible, loosely roll it up into a long sausage, including the kitchen towel, and leave it to cool for around 20 minutes.

Once cooled, gently unroll the sponge and spread over the rhubarb compote. For the filling, mix coconut blossom sugar, vanilla powder and corn starch. Whisk cream stiff and add while whisking the sugar mixture. Spread the cream on the rhubarb compote layer. Use a spatula to smear everything into a fairly smooth dense layer. Confidently, start rolling the sponge up again, making sure there's no kitchen towel or paper inside it. If the filling starts to slip out, just push it back in. Straighten both Swiss roll ends with a sharp knife. Garnish with raspberries. Pop it into the fridge for a half hour. The Swiss roll is best at its baking day, as the sponge soaks through quite quick.

Rhabarber Frangipane Tartes mit Datteln & Mandeln

Für 4 kleine quadratische Tartes
4 Datteln
3 EL Mandeln
4 Scheiben TK-Bio-Vollkornblätterteig, rechteckig (z.B. von moin Bio)
4 Stiele Rhabarber, vorzugsweise Himbeerrhabarber
½ TL Vanille, gemahlen
2 EL Dattelsirup

Die Blätterteigscheiben 5 Minuten antauen lassen und den Backofen auf 230 °C vorheizen. Datteln und Mandeln im Mixer zu einer feinen Paste verarbeiten. Rhabarberstiele waschen sowie den oberen und unteren Teil entfernen. Die Stiele in 5 gleich lange Stücke schneiden. Die Haut verwende ich mit. Die Blätterteigscheiben auf einem mit Backpapier ausgelegten Blech verteilen. Die Dattel-Mandelpaste auf den vier Blätterteigscheiben verteilen. Rhabarberstücke, Dattelsirup und Vanille vermischen und pro Blätterteigscheibe 5 Rhabarberstücke verteilen. Die Tartes für etwa 10–12 Minuten gold-braun backen. Lauwarm schmecken sie am besten.


Rhubarb Frangipane Tartes with dates & almonds

For 4 small tartes
4 dates
3 tablespoons almonds
4 good organic whole grain puff pastry slices
4 rhubarb stalks
½ teaspoon ground vanilla
2 tablespoons dates syrup

Allow puff pastry to defrost for 5 minutes at room temperature and preheat the oven to 230 ° C. Using a food processor blend dates and almonds to a fine paste. Wash rhubarb stalks and remove the upper and lower part. Cut the stalks into 5 equal pieces. Spread pastry on a lined baking tray. Spread the date-almond paste on the four pastry slices. Mix rhubarb, date syrup and vanilla and distribute 5 rhubarb pieces per each puff pastry slice. Bake the tartes for 10-12 minutes or until golden brown. Enjoy the tartes lukewarm!
