New York cheesecake tart with blood oranges

In February and March the winter can be very long. Especially when it's still very cold and grey outside and we're in a seemingly never-ending lockdown. That's why I was very happy that florists were allowed to reopen. There I chose the most beautiful poppies and tulips.

And these go perfectly with blood oranges that are still in season. The tart taste of blood oranges goes wonderfully with cheesecake. So the idea for a new recipe - my New York cheesecake tart with blood oranges - came about.

NEW YORK CHEESECAKE TART WITH BLOOD ORANGES

For one tart (11 x 35 cm)

For the shortpastry
150 g spelt flour (type 630 or 1050) + more for the tart pan
10 g icing sugar
1 pinch of salt
100 g cold unsalted butter + more for the tart pan
1 egg yolk (size M)

For the filling
230 g cream cheese
90 g Greek yogurt
40 demerara sugar
1 egg (size M)
1 teaspoon vanilla custard powder
¼ tsp ground vanilla
Zest and juice of half an organic lime
optional: 1 tbsp orange blossom water

For decoration
1-2 organic blood oranges
1 passion fruit
2 tbsp pomegranate seeds

For the pastry mix the spelt flour, icing sugar and salt in a bowl. Add the chopped cold butter and rub the mixture with your hands to a crumbly mass. Then add the egg yolk and quickly process it into a smooth dough. Then wrap the dough in cling film and let it rest for 30 minutes in the refrigerator. Preheat the oven to 180°C. Grease your tart pan with butter and dust it with a little spelt flour. Then roll out the dough on a well-floured work surface and fit it in the tart pan. Cover the dough with baking paper and spread the lentils on top. Bake blind for 15 minutes, or until lightly golden. Remove from the oven, remove the baking paper and lentils and allow to cool slightly.

For the filling, stir all ingredients into a smooth mixture and pour into the tart pan. Pour hot water into a heat-resistant form and place in the bottom of the oven. This prevents the New York cheesecake mass from cracking. Bake the tart for about 30–35 minutes, until the cheesecake mixture is firm. Let cool, then wash and slice the blood oranges. Decorate with the blood orange slices, passion fruit and pomegranate seeds.
