Radicchio – Ein Food-Moodboard für Farrow & Ball

Werbung /// Als ich vor einiger Zeit eine Anfrage für eine Vorspeise in der Farbgebung einer Farrow & Ball Farbe bekommen habe, war ich natürlich sofort Feuer und Flamme. Denn, was ich an meiner Arbeit als Fotografin und Artdirektorin besonders liebe, ist es, Food und Farben aufeinander abzustimmen. Besonders auf meinem Instagram-Profil werde ich immer wieder von ganz unterschiedlichen und weltweit verstreuten Menschen für meine Farbwelt und mein Farbgespür gelobt.

Als Fotografin und Artdirektorin ist es natürlich etwas ganz Essentielles, ein gutes Farbgespür zu besitzen. Dieses habe ich einerseits über Jahre verfeinert, aber mit Sicherheit auch ein stückweit von meinen Eltern in die Wiege früh gelegt bekommen. An eine Situation in meiner Kindheit erinnere ich mich noch besonders gut. Als Zweitgeborene habe ich viele Kleidungsstücke von meiner Schwester zum Auftragen vererbt bekommen. Die waren allerdings oftmals in Rot. Als ich einmal meiner Mutter sagte, dass ich lieber „Rosa“ tragen würde, sagte sie, dass „Rosa doch so ähnlich sei wie Rot “. Aber schon damals ließ sich mein Farbgespür nicht an der Nase herumführen.

As a photographer and art director, it is, of course, quite essential to have a good colour feel. This one I have refined for years, but certainly also my parents handed this to me quite early. I remember a situation in my childhood particularly well. As a second-born, I have inherited many pieces of clothing from my sister for application. They were, however, often in red. When I once said to my Mum that I would rather wear "Pink", she said that "Pink is something like red." But even then, my intuition for colours did not allow mislead me.

Dieser Blogpost ist somit ein Moodboard für die Farbe „Radicchio“ von Farrow & Ball. Diese Farbe ist ein wunderschönes gedämpftes Weinrot, welches dennoch eine hohe Leuchtkraft besitzt. Da alle Sommerbeeren meine Lieblingsfrüchte sind, viel mir die Farbauswahl nicht schwer. Denn ich liebe alle Beerenfarbtöne von Rot über Pink bis hin zu Violett. Um die Farbe Radicchio habe ich eine Farbwelt mit 4 weiteren Farben geschaffen: Peignoir (ein helles Rosa-Grau), Calamine (ein heller Rossfarbton), Cinder Rose (ein gedecktes Rosenholz) und Brinjal (ein beeindruckendes Violett mit Rotstich). So wurde in diesem Post und in meiner Vorspeise alles auf meine ausgewählte Farrow & Ball Farbwelt abgestimmt.

This blog post is therefore a mood board for the colour "Radicchio" by Farrow & Ball. This colour is a beautiful steamed wine red, which nevertheless has a high luminosity. Since all summer berries are my favourite fruits, the colour selection for this post wasn’t difficult for me. Because I love all berry colours from deep red to pink to violet. To the colour Radicchio I have created a colour world with 4 other colours: Peignoir (a light pink-gray), Calamine (a bright pink colour), Cinder Rose (a covered rosewood) and Brinjal (an impressive violet with reddish). So in this post and in my starter everything was adjusted to my selected Farrow & Ball colour world.

Passend zu der Farbe gibt es den roten und länglichen Radicchio Rosso di Treviso Precoce, gebackenen Ricotta sowie Rote Bete Carpaccio mit Granatapfelkernen, Belugalinsen, Brombeeren, rote Rettich Kresse und Brombeer-Chutney. Der zart-bittere Geschmack des Radichios harmoniert sehr gut mit der roten Bete und den Granatapfelkernen und der süß-herben Note der Brombeeren bzw. des Chutneys. Darüber hinaus lässt sich diese Vorspeise sehr vorbereiten, so dass der Auftakt des Weihnachtsmenüs ganz entspannt verlaufen kann. Das Brombeer-Chutney ist eines meiner Lieblingschutneys, was ich aktuell mit TK_Brombeeren einkoche und gerne zu Weihnachten verschenke.

To match the colour, there is the red and oblong Radicchio Rosso di Treviso Precoce, baked ricotta and beetroot carpaccio with pomegranate, Beluga lentils, blackberries, red radish cress and blackberry chutney. The delicate bitter taste of the radicchio harmonizes very well with the red beet and the pomegranate seeds and the sweet-sour notes of the blackberries and the chutney. In addition, this starter can be prepared very well so that the opening of the Christmas menu can be quite relaxed. The blackberry chutney is one of my favourite chutneys, which I currently cook with frozen blackberries and gladly give away as a Christmas gift.

Brombeer-Chutney

Für 2 Gläser (je ca. 220 ml)

Für das Chutney
1 EL Olivenöl
1 TL schwarze Senfsamen
1 rote Zwiebel, gehackt
½ rote Chilischote, gewaschen, fein gehackt (ohne Kerne)
1 cm frischer Ingwer, fein gerieben
1 Zimtstange
2 Nelken, pulverisiert
2 Lorbeerblätter
400 g Brombeeren (frisch oder TK)
100 g säuerliche Äpfel (z. B. Boskoop), geschält und gewürfelt
4 EL Rotweinessig
50 ml Wasser
50 g Rohrohrzucker
etwas Salz

Olivenöl in einem Topf erhitzen, die schwarze Senfsamen und rote Zwiebel hinzugeben. Die Mischung auf kleiner Hitze 10 Minuten garen, bis die Zwiebeln weich und süß sind. Chili, Ingwer, Zimtstange, Nelken, Lorbeerblätter, Brombeeren, Apfel, Rotweinessig, Wasser und Rohrzucker hinzugeben und verrühren. Das Chutney bei geringer Hitze etwa 30 Minuten einkochen lassen, bis eine dickflüssige, marmeladenartige Masse entstanden ist. Dabei immer wieder umrühren. Dann das Chutney mit Salz abschmecken. Das Brombeer-Chutney in sterile Einmachgläser füllen und sofort verschließen. Das Chutney schmeckt am besten nach 24 Stunden, wenn sich alle Aromen verbunden haben.


Blackberry chutney

For 2 glasses (each approx. 220 ml)

For the chutney
1 tablespoon olive oil
1 teaspoon black mustard seeds
1 red onion, chopped
½ red chilli peppers, washed, finely chopped (without seeds)
1 cm fresh ginger, finely grated
1 cinnamon stick
2 cloves, powdered
2 fresh bay leaves
400 g blackberries (fresh or frozen)
100 g of sour apples (e.g., Boskoop), peeled and diced
4 tablespoons of red wine vinegar
50 ml of water
50 g of raw cane sugar
a bit of salt

Heat olive oil in a pot, add the black mustard seeds and red onion. Cook the mixture on low heat for 10 minutes until the onions are soft and sweet. Add chili, ginger, cinnamon stick, cloves, bay leaves, blackberries, apple, red wine vinegar, water and cane sugar and stir. Let the chutney boil at low heat for about 30 minutes until a thick, jam-like mass is formed. Stir constantly. Then season the chutney with salt. Fill the blackberry chutney in sterile jars and close immediately. The chutney tastes best after 24 hours, when all the flavours have joined.

Rote Bete Carpaccio mit Radicchio, gebackenen Ricotta und Brombeerchutney

Für 4 Personen

Für die Linsen
30 g Belugalinsen
1 EL natives Olivenöl
½ EL Zitronensaft
1 EL frische Thymianblätter, gehackt
Salz, Pfeffer

Für den Ricotta
250 g Bio-Ricotta oder selbstgemachter Ricotta
1 EL natives Olivenöl
1 EL frische Thymianblätter
½ rote Chilischote
1 Knoblauchzehe
Abrieb einer halben Bio-Zitrone
Salz
Schwarzer Pfeffer

Für das Carpaccio
4 Rote Bete Knollen
½ Teelöffel Rohrohrzucker
2 EL Balsamico-Essig
1 EL Zitronensaft
1 EL natives Olivenöl

Für den Salat
2 Radicchio (Rosso di Treviso Precoce)
4 EL Granatapfelkerne
2 kleine Bete Rote Rettich Kresse
ein paar frische Brombeeren – je nach Saison
1 TL Rosa Pfefferbeeren

Zum Servieren
Brombeer-Chutney oder vergleichbares Chutney

Die Belugalinsen nach Packungsanweisung garen, dann abgießen und etwas auskühlen lassen. Lauwarm mit dem Olivenöl, Zitronensaft und Thymian marinieren. Mit Salz und Pfeffer abschmecken und beiseite stellen.

Backofen auf 180 °C vorheizen. Für den Ricotta das Olivenöl in eine kleine Schüssel geben und mit den abgezupften Thymianblättern vermischen. Chili und Knoblauchzehe in feine Scheiben schneiden und ebenfalls dazu geben. Die Schale der Zitrone hinein reiben, mit etwas Salz und schwarzen Pfeffer würzen und alles gut vermischen. Den Ricotta in eine ofenfeste Form geben und komplett mit dem aromatisierten Ölmischung überziehen. Den Ricotta etwa 35 min in der mittleren Schiene goldgelb backen.

Währendessen die Rote Bete schälen (Fingerschutz benutzen!) und die Knollen auf einem Gemüsehobel in feine Scheiben schneiden. In einer Schüssel die feinen Scheiben mit dem Rohrohrzucker, dem Essig, den Zitronensaft und etwas Salz vermischen. Alles gut durchmischen, bis jede Scheibe umhüllt ist. Das aromatisiert die Rote Bete und macht sie zart.

Die Rote-Bete-Scheiben, gebackenen Ricotta, und gewaschenen Radicchio auf einer großen Platte anrichten. Belugalinsen, Granatapfelkerne, Brombeeren, Kresse und Rosa Pfefferbeeren darüber verteilen und mit dem Brombeer-Chutney sowie Brot servieren.

Beetroot carpaccio with radicchio, baked ricotta and blackberry chutney

For 4 people

For the lentils
30 g Beluga lentils
1 tablespoon of olive oil
½ tablespoon lemon juice
1 tbsp fresh thyme leaves, chopped
Salt pepper

For the ricotta
250 g of organic ricotta or homemade ricotta
1 tablespoon of olive oil
1 tablespoon fresh thyme leaves
½ red chilli peppers
1 clove of garlic
zest of half an organic lemon
salt
Black pepper

For the Carpaccio
4 red beetroots
½ teaspoon of raw cane sugar
2 tablespoons of balsamic vinegar
1 tablespoon lemon juice
1 tablespoon of virgin olive oil

For the salad
2 Radicchio (Rosso di Treviso Precoce)
4 tablespoons pomegranate seeds
2 packages of beetroot red radish
A few fresh blackberries - depending on the season
1 teaspoon pink peppercorns

To serve
Blackberry chutney or comparable chutney

Cook the Beluga lentils after pack instruction, then drain and let cool down a bit. Mix the lentils with olive oil, lemon juice and thyme. Season with salt and pepper and set aside.

Preheat oven to 180 ° C. For the ricotta, mix the olive oil in a small bowl with the thyme leaves. Finely slice the chili and garlic clove and add to the bowl. Rub the zest of the lemon, season the mixture with some salt and black pepper and mix well. Place the ricotta in an oven-proof form and cover it completely with the aromatized oil mixture. Bake the Ricotta for about 35 minutes in the middle rail or until golden.

Peel the beetroot (use finger protection!) and cut on a mandoline slicer into very fine slices. In a bowl, mix the fine beet slices with raw cane sugar, vinegar, lemon juice and some salt. Blend everything well until each beet slice is wrapped. This dressing tenders the beetroot.

Put the beetroot slices, baked ricotta, and washed radicchio on a large plate. Sprinkle the lentils, pomegranate seeds, blackberries, cress and pink peppercorns over it and serve with the blackberry chutney and some bread.
